In anticipation of all the work and all the calories associated with our Thanksgiving Day feast, we’ll be eating light and eating simple — as in very little prep work or clean up.
Monday: Southwest Roll-ups, which I made a couple of weeks ago and stashed in the freezer. After thawing, it’s a quick thirty minutes in the oven and done.
Tuesday: Grilled cheese, baked french fries, fruit.
Wednesday: Cranberry oatmeal bake, our breakfast-for-dinner selection of the week. I can make this up ahead of time, it’s cheaper than an entree with meat, and it’s a head start to enjoying one of my T-Day favorites — cranberries.
Thursday: The Feast!
